Paneer Tikka Skewers with Tandoori Masala and Bell Peppers

Ingredients:

For the Marinade:

  • 200 grams paneer (cottage cheese), cut into cubes
  • 1 cup thick yogurt (hung curd)
  • 1 tablespoon ginger-garlic paste
  • 1 tablespoon Shivani's tandoori masala
  • 1 teaspoon red chili powder (make it more spicy)
  • 1 teaspoon garam masala
  • 1 tablespoon lemon juice
  • Salt to taste
  • 2 tablespoons mustard oil or vegetable oil

For the Skewers:

  • 1 large onion, cut into chunks
  • 1 large red bell pepper, cut into chunks
  • 1 large green bell pepper, cut into chunks
  • 1 large yellow bell pepper, cut into chunks
  • Skewers (wooden or metal)

For Garnish:

  • Fresh coriander leaves, chopped
  • Lemon wedges

Instructions:

  1. Prepare the Marinade:

    • In a large mixing bowl, whisk the thick yogurt until smooth.
    • Add ginger-garlic paste, tandoori masala, red chili powder, garam masala,  lemon juice,  salt, and oil to the yogurt. Mix well to form a smooth marinade.
  2. Marinate the Paneer:

    • Add the paneer cubes to the marinade and gently mix to coat each cube evenly.
    • Add the onion and bell pepper chunks to the marinade and mix gently.
    • Cover the bowl and let it marinate for at least 30 minutes. For best results, refrigerate and marinate for 2-3 hours or overnight.
  3. Prepare the Skewers:

    • If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning.
    • Preheat your oven to 200°C (400°F) or preheat your grill.
    • Thread the marinated paneer, onions, and bell peppers alternately onto the skewers.
  4. Cook the Paneer Tikka:

    • If using an oven, place the skewers on a baking tray lined with aluminum foil or parchment paper. Bake for 15-20 minutes, turning the skewers halfway through, until the paneer and vegetables are cooked and slightly charred.
    • If using a grill, cook the skewers on a medium-hot grill, turning occasionally, until the paneer and vegetables are cooked and slightly charred.
  5. Garnish and Serve:

    • Remove the paneer tikka from the skewers and arrange them on a serving platter.
    • Garnish with freshly chopped coriander leaves and lemon wedges.
    • Serve hot with mint chutney or any dip of your choice.
