Ingredients:
For the Marinade:
- 200 grams paneer (cottage cheese), cut into cubes
- 1 cup thick yogurt (hung curd)
- 1 tablespoon ginger-garlic paste
- 1 tablespoon Shivani's tandoori masala
- 1 teaspoon red chili powder (make it more spicy)
- 1 teaspoon garam masala
- 1 tablespoon lemon juice
- Salt to taste
- 2 tablespoons mustard oil or vegetable oil
For the Skewers:
- 1 large onion, cut into chunks
- 1 large red bell pepper, cut into chunks
- 1 large green bell pepper, cut into chunks
- 1 large yellow bell pepper, cut into chunks
- Skewers (wooden or metal)
For Garnish:
- Fresh coriander leaves, chopped
- Lemon wedges

Prepare the Marinade:
- In a large mixing bowl, whisk the thick yogurt until smooth.
- Add ginger-garlic paste, tandoori masala, red chili powder, garam masala, lemon juice, salt, and oil to the yogurt. Mix well to form a smooth marinade.

Marinate the Paneer:
- Add the paneer cubes to the marinade and gently mix to coat each cube evenly.
- Add the onion and bell pepper chunks to the marinade and mix gently.
- Cover the bowl and let it marinate for at least 30 minutes. For best results, refrigerate and marinate for 2-3 hours or overnight.

- If using wooden skewers, soak them in water for at least 30 minutes to prevent them from burning.
- Preheat your oven to 200°C (400°F) or preheat your grill.
- Thread the marinated paneer, onions, and bell peppers alternately onto the skewers.

Cook the Paneer Tikka:
- If using an oven, place the skewers on a baking tray lined with aluminum foil or parchment paper. Bake for 15-20 minutes, turning the skewers halfway through, until the paneer and vegetables are cooked and slightly charred.
- If using a grill, cook the skewers on a medium-hot grill, turning occasionally, until the paneer and vegetables are cooked and slightly charred.

- Remove the paneer tikka from the skewers and arrange them on a serving platter.
- Garnish with freshly chopped coriander leaves and lemon wedges.
- Serve hot with mint chutney or any dip of your choice.
