If you’re craving something a little different than usual, consider trying this Coconut Korma Chicken.

It’s full with flavor and works perfectly with rice.

You could do simple by adding Shivani's Korma Sauce to left over chicken or you could make the recipe from scratch.

Ingredients

  • Shivani's Curry masala
  • 1 medium onion
  • 3-4 garlic cloves
  • salt
  • freshly ground black pepper
  • diced (or shredded) rotisserie chicken
  • 2 tomatoes diced
  • lite coconut milk
  • 1 tsp brown sugar
  • 1 inch fresh ginger grated
  • 1 tsp lime juice
  • 1/2 cup shredded coconut
  • 1/2  cup crushed cashews
  • sliced green onions and/or fresh cilantro
Lets make it
  • Heat the oil, then cook the curry masala in the hot oil to bring out the oils and flavor. Add the onion and cook until translucent. Add the garlic, salt, pepper.
  • Add the chicken to the mixture and stir to coat it with the onions and spices. Add the tomatoes, coconut milk, brown sugar and ginger. Let it simmer and thicken.
  • When ready to serve, stir in the lime juice, coconut and cashews. Serve over cooked rice, garnished with green onions and/or cilantro.

Tomato Mutton Korma Recipe

Tomato Mutton Korma Recipe

4 servings

Ingredients:

  • Shivani’s Korma Sauce
  • Shivani’s Garam Masala spice powder
  • 450g mutton (cut into small pieces)
  • 3tbsp olive oil
  • 1tbsp ginger garlic paste
  • Green chilies, mint and coriander leaves (optional)
  • Salt
  • 1 cup yogurt 
  • 2 chopped tomatoes

Steps:

  • Leave Korma Sauce to thaw in fridge before preparing the dish.
  • Marinate mutton in yogurt, ginger garlic paste, and Shivani’s Garam Masala
  • On medium-low heat, mix the Korma Sauce with 4tbsp water in a saucepan
  • Heat oil in a heavy-bottomed pot, add marinated meat, green chili and Shivani’s Garam Masala.
  • Stir in Korma Sauce mixture and cook on low-medium heat for 30min (cover the pot).
  • After 30min, pour in 2 cups of water (or as needed) and mix
  • Slow cook the mutton by covering the pot and leaving it on medium heat until meat turns soft and stir occasionally.
  • Add the coriander leaves and mint leaves if needed and cook until oil separates and floats on top. 
  • Serve hot and enjoy!
You can replace mutton with lamb too if you want
